With time I like more and more professions. However, my starting necro remains my favorite character by a very large degree. However, anything with a lot of utility is fun. Lately I have gotten addicted to the rush of playing infuser in HoH. The common appearance of spike teams and the reflex position makes it a lot more fun then I expected.

My main char is also still my favorite: E/Mo
Esp when you go UW with a necro and do the stuff a monk does ;p its awesome (don't ever say Eles can't farm)
And solo some foes gives ya really some satis"faction", esp when you have started this game with that char and remember the days you where pawned by charr and grawls

I enjoy playing my Mesmer most.
I would then have to say my Necro (no MM please, makes me tired just clicking on skills to keep those dammned minions alive)
Then Ranger.
Then warrior, use him now mostly for Ettins
Then Monk, farming mostly and use her only with friends and the guild for healing. No pugs here.

I really like playing an Interrupt Ranger in both PvE and PvP. Pissing off casters can be fun!
For farming it is W/X or 55 Monk, depending on what needs farmed.

If you only can hold two swords, but attack from one of them, you lose the benefit of holding a shield.

Of course I can dual-wield. Granted, I can only dual-wield Daggers like any other assassin but it's still dual-wield. Two swords would indeed be overpowered.

I either prefer solo'ing (100% on my own, no henchies) or Healing. For Healing, it's always Monk, for solo'ing, it's whatever is effective

Playing Mesmer is the most challenging experience in both PvE and PvP. If you don't know what you are doing, you will be useless and/or die quickly. All other professions at least can cause something even the player has no idea what to do.
So I prefer Mesmer.
